Yes you can eat the leaves of PSB. They take the same time to cook as the heads. You can eat the leaves of most brasicas, try the leaves of a cluliflower. I can’t understand why people trim them off, when they have paid for them!
Hello I know you asked this question in 2006 The answer is yes, earlier today I cut some purple sprouting for tomorrows roast, I also cut some leaves for today. the wife cooked them the same as cabage, we prefer without the stalks.

read elswhere that you should just remove thick bit of stalk and outer leaves, then lightly boil or steam
